Here is a throwback to a couple of photos of these white chocolate peanut butter oatmeal cream pies I made earlier this year. Additional photos were posted on my Instagram here.

I had a similar dessert at a shop and fell in love, and thus had to figure out how to make them myself. Vanilla and chocolate buttercream frosting sandwiched between two white chocolate peanut butter cookies!

Yum and Yum. I’d eat the cookies alone but they are oh so delicious with the buttercream filling.
