This fall I am making a pointed effort to try pumpkin. With the season change and with seeing pumpkin this and pumpkin that, popping up everywhere, I’ve decided to see if I can find something I can enjoy. Personally, I’d prefer a raspberry or concord grape pie to pumpkin, so I’ll skip the pie.
Thus I happened upon this Pumpkin Alfredo recipe by Yellow Bliss Road. Check out the link for the recipe and how to! I love Alfredo and her pictures make it look so yummy that it just had to give it a try.
A key item for me was that I want to make food with real pumpkin this season not just the pumpkin spice you buy in the spice section and this recipe fits the bill. The recipe was simple to follow and I was pleasantly surprised that the pumpkin wasn’t an overwhelming flavor and still got that yummy Parmesan taste. Though to be fair I may enjoy sprinkling extra on top of my plate.
This was so delicious that I am going to make it again soon but for the full quantity next time. I have learned to cut new recipes in half just in case, but this one we are wishing we had leftovers.
