I found these cookies while searching for pumpkin recipes to try this month and have fallen in love. The Pinterest post I found calls them soft and chewy, and I would definitely agree. Just so yummy, I can’t help but a grab a few at a time! If you like pumpkin desserts and snickerdoodle cookies I strongly suggest you bake yourself a batch. The cinnamon sugar coating is why I am nicknaming them the pumpkin snickerdoodle in my house. Making these cookies also had great timing for me, because I needed to bake something up as a thank you gift. Recently I was mowing on my day off work and accidentally got too close to the garden edging. The edging got sucked into the blades and brought the mower to a halt. This mower being new to me and my tugs having no avail, I was all ready to give up. I had the key in pocket and was just about to walk away when the neighbor’s contractor came over. He was such a blessing. We were able to get the deck lifted so he could pull the edging out and I could continue with the yard. So I was enthused to take over some cookies and thank him for his assistance.
