Mac n’ Cheese is my bread and butter of life, my go-to comfort food. I love this meal! I even went to a mac n’ cheese festival. It was a fun time sampling a variety of mac n’ cheeses. Most with some kind of twist on the flavoring. Is it weird that one I liked the best was the traditional good old cheesy mac?
Some people binged on ramen in college, I had my boxes of mac n’ cheese. So I was quite happy to see that my pumpkin recipe magazine included a pumpkin mac n’ cheese. No surprises on this one, I totally liked it, but I would say it’s better made with a partner in the kitchen.

In my experience, it’s helpful to have an extra set of hands and eyes watching the food and stirring when you have three burners on the stove going at once. To complicate my first time making this dish I attempted to use only two burners. By leaving the pasta in the strainer and melting the butter and mixing up the breadcrumb topping after the pasta finished. Which sounds less complicated, but I was so frazzled trying to figure out what to do next I couldn’t hold a casual conversation and ended up turning off the oven and having to re-preheat the oven. I didn’t realize I’d turned the oven off till I was all ready to bake the dish.
All in all, it came out delicious! A bonus is that it yielded quite a few leftovers for work lunches this week. It’s nice when a good meal can be enjoyed again, especially if you’re not overly fond of sandwiches. What is your go-to comfort food?
