My brother got me a peanut butter cookbook for my birthday in November and last weekend I got around to trying a recipe.
In the past, I had heard of making cakes in the microwave with coffee mugs and this cookbook just happened to have one those such mugcake recipes. I had all the ingredients on hand already and thought it would be a great recipe to try out to christen the new cookbook.
The recipe is for a peanut butter chocolate mugcake and each ingredient calls for under a few tablespoons.
I melted the butters and stirred together the rest of the ingredients and popped it in my microwave.
Once going I needed to watch to make sure it didn’t over rise. For my microwave power that called for stopping and letting it deflate about 2-3 times before it finally finished it’s cooking time.
Once out I slid a knife around the edge and turned it upside down. As you can see in the photos it ended up coming out in two hunks. Which was great as I was going to be splitting it with Ben.
Next step was to melt the delicious peanut butter & chocolate for a topping. Once poured on the cake it was ready to devour, *cough cough* I mean serve… 🙂

Yeah, I hadn’t heard of it till a few years back. I was impressed by how this one turned out. It was a nice dense chocolately peanut buttery cake.
