I decided to make lemon curd. I heard so many good things about it on past posts that I just needed to give it a go. I thought now would be the perfect time as I have plenty of lemons from the lemon poppy seed bread I made earlier.
The process was very easy mostly whisking and combining the ingredients over the stove.
After letting it chill out in the fridge for a bit I decided to try it on my bread… it might have been too much lemon. I took a bite and didn’t quite enjoy the smell and taste. I’m proud that I attempted to expand my horizons and gave it a try. Maybe it would be better on a bread that isn’t lemony already.
Thoughts? Should I try a different type of curd?

I’ve been meaning to try making lemon curd, too; I just never seem to get around to it! I’ve only had some once, I think. It was in a yogurt cup with berries. You’d think that would be too much sour, but the berries perfectly balance the lemon and yogurt tang. Which recipe did you use?
